As fig season comes to a close, I felt inspired to make this delicious and dairy-free ice cream. No refined sugar or dairy necessary and I have to say – it is pretty heavenly!
8 tbsp JOI organic cashew milk base
1 cup coconut cream
2 cups water
1 tsp vanilla extract
1/2 tsp sea salt
1 cup fresh ripe figs
1/3 cup raw honey
1 cup 85% dark chocolate, chopped
Zest of 1/4 lemon
Blend all ingredients well except for chocolate. Stir in chocolate chunks. Freeze in ice cream maker.
