A special recipe I learned from my time working at Verbena Restaurant in San Francisco, but with a twist! I make this all of the time when we have guests – it’s always a hit. Creamy, high protein, flavorful and healthy!
Pumpkin seeds are natural parasite-fighters, and are packed with protein. Keep that gut healthy by incorporating them into your diet on a weekly basis!
High Protein Pumpkin Seed Salad Dressing
Dressing ingredients
- 1 cup pumpkin seeds
- 1 ½ cups boiled water, plus more if needed
- ½ teaspoon sea salt, plus more to taste
- 2 tablespoons maple syrup
- 2 tablespoons apple cider vinegar
- ½ teaspoon onion powder
- ½ cup olive oil
- ½ shallot, minced
- 2 cloves garlic, grated
- Juice of 1 lemon
- Freshly ground black pepper
- ½ cup chopped herbs of choice, such as:
- 3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
3 tablespoons chopped fresh tarragon
5 tablespoons chopped fresh dill
Pulse everything well in a blender or food processor. Taste and adjust to taste. Keep fresh in the refrigerator, and then toss on a simple salad when you’re ready to eat!
